Preheat oven to 300 degrees. Line baking sheets with parchment paper.

Pop popcorn; set aside.

Add butter, corn syrup, salt, marshmallows, brown sugar and evaporated milk to a heavy bottomed saucepan; stir over medium heat until smooth. Allow to come to a boil, while stirring vigorously; remove from heat; stir in vanilla. Pour over popcorn; lightly toss to incorporate throughout.

Transfer popcorn to prepared baking sheets. Bake for 17-20 minutes, or until desired crispiness is reached OR bake for about 13-15 minutes for a gooey, softer popcorn.

Place 3 c. of the baked popcorn in a large bowl.

Melt chocolate; pour over the 3 c. caramel popcorn. Add 1/2 c. peanuts; stir to incorporate; allow chocolate to set. It can be put in the refrigerator just until the chocolate solidifies.

Add chocolate popcorn into the caramel popcorn; toss to mix.

Serve immediately if possible because it's best when fresh.

8-10 servings.
