While not exactly a cookie, these little yummy treats can definitely act like they are. Serve them at your holiday party or give them as gifts in a pretty tin container or cellophane bag.
4 oz. saltine crackers (about 24 crackers)
1 c. butter
1 c. dark brown sugar
2 c. semi-sweet chocolate chips
¾ c. chopped pecans or favorite nuts
Preheat oven to 400 degrees.
Line an 11x7 rimmed jelly pan with aluminum foil; spray foil with non-stick cooking spray. Place crackers in single layer.
In a saucepan, combine sugar and butter; bring to a boil, starting to time it when it is truly boiling and you see it foaming around the edges; boil for 3 minutes. DON'T stir while it is boiling! Immediately pour mixture over saltines; spread to completely cover the crackers.
Bake for 5 - 6 minutes. Remove from oven.
Sprinkle chocolate chips over the top; let sit for 5 minutes. Spread melted chocolate. Sprinkle on chopped nuts. Let cool completely. Break into pieces.
Store in an air tight container.
