You don't need to be from Charleston to make and enjoy these chewies. They are delicious, quick and so easy to make. They are great right out of the oven and even better after they have cooled down. They can be made without nuts, if desired.
4 T. unsalted butter, plus additional softened butter for the baking dish
1 c. packed light brown sugar
1/2 t. almond extract
1/2 t. vanilla extract
1 large egg, lightly beaten
3/4 c. all-purpose flour
1 t. baking powder
1/4 c. chopped pecans
powdered sugar, for dusting
Preheat oven to 350 degrees. Butter an 8x8 inch glass baking dish.
Melt butter in a small saucepan; remove from heat; let cool slightly. Add brown sugar, almond and vanilla extracts; stir until smooth; stir in the egg.
Whisk together flour and baking powder in a small bowl; fold mixture into the brown sugar mixture; fold in pecans. Pour batter into the prepared baking dish.
Bake about 20 minutes or until set around the edges but still loose in the center.
Cool completely. Sift powdered sugar on top.
