This relish is sweet, tart and very refreshing. It's loaded with vitamin C, more so than cooked cranberry sauce.
1 bag fresh cranberries
1 whole navel orange, with skin on, washed and cut into chunks
1/2 c. shelled pecans or walnuts
1/3 c. mild honey, like clover honey
Place all ingredients in a food processor. Pulse; blend until there is a uniform, very finely chopped mixture with a crunchy texture.
Chill.
8 servings.
*It's best if prepared the day before serving to let all of the flavors combine.
