Do you get tired of eating the same salad night after night? This easy, refreshing salad gives you a nice twist with a little bit of a tangy flavor.
12 oz. jar roasted red peppers, drained and chopped
1 1/2 c. pitted assortment of olives (green, black, kalamata) chopped
4 celery ribs, sliced
1 romaine heart, sliced
3 T. olive oil
2 T. white wine vinegar
1/2 t. kosher salt
1/4-1/2 t. freshly ground black pepper
Combine red peppers, olives, celery and romaine in a large salad bowl.
In a cruet, jar or shaker, add olive oil, vinegar and salt and pepper; shake to combine.
Pour over the salad; toss.
Serve.
