This dish is like an oven casserole but made in the crock pot. It's yummy chicken made in a creamy sauce of cream of soups, seasonings, an onion soup mix packet and rice. It's so easy and good, you'll make it often.
1 1/2 lb. boneless, skinless chicken breasts
10.5 oz. can cream of chicken soup (or any cream of soups)
10.5 oz. can cream of mushroom soup (or any cream of soups)
1 soup can of water (or chicken stock/broth)
1/2 t. garlic powder
1/4 t. freshly ground black pepper
2 c. Minute Rice (NOT standard rice)
1 oz. Lipton onion soup mix packet
Add canned soups, water, garlic powder, pepper and rice to a large bowl; stir well.
Spray the bottom and sides of a 5 qt. or larger crock pot with non-stick cooking spray.
Add half of rice mixture to the crock pot; place chicken breasts on top; evenly spread the remaining rice mixture on top. Sprinkle on the onion soup mix.
Cover. Cook on High for 3 1/2 hours. DO NOT uncover and peek during the cooking time.
Serve.
