No-Bake Peanut Butter Fudge Cheesecake Parfaits

Ingredients

12 chocolate cream filled Oreo cookies
8 oz. package cream cheese, softened
1/2 c. powdered sugar plus 1/3 c., divided
1/2 c. creamy peanut butter
1/2 t. salt
1/2 t. vanilla extract
1 1/2 c. heavy whipping cream
1 1/4 c. quartered mini Reese's Peanut Butter Cups
1/2 c. hot fudge ice cream topping

Place cookies in a food processor; pulse until cookies are crumbled; set aside 1 T. for garnish.

Beat cream cheese until creamy; add 1/2 c. powdered sugar; beat again; add peanut butter, salt and vanilla; beat until creamy.

In a clean, chilled mixing bowl, beat heavy cream and remaining powdered sugar until stiff peaks form.

Fold 2 c. whipped cream into peanut butter mixture; stir in 1 c. chopped peanut butter cups.

Spoon 2 t. cookie crumbs into the bottom of eight 5 oz. shot glasses; top with a large teaspoon of peanut butter cheesecake. Tap glasses on countertop to even out and settle the mixture. Divide and sprinkle remaining crumbs into the glasses. Spoon the remaining cheesecake on top of the crumbs. Tap glasses again to settle the ingredients evenly.

Place hot fudge in a microwave-safe bowl; heat for 15 seconds; spoon hot fudge evenly on the tops of the parfaits. Pipe remaining whipped cream on top of each parfait; top with the reserved crumbs and remaining peanut butter cups.
