Change up your salad routine with a salad that's delicious, healthy and light. It pairs great with just about any main dish.
Salad:
3-4 medium tomatoes, diced
1 green bell pepper, seeds and membranes discarded, chopped
1/2 - 1 English cucumber, seeds removed, diced
5 green onions, white and green parts, chopped
1/4 c. fresh parsley, chopped
1 small onion, chopped (1/2 c.)
Romaine lettuce, chopped (optional)
Dressing:
1/4 c. extra virgin olive oil
1/4 c. freshly squeezed lemon juice
2 garlic cloves, minced
1 t. dried mint (or 1 T. chopped fresh mint)
1/2 t. kosher salt
freshly ground black pepper, to taste
In a large bowl add tomatoes, bell pepper, cucumber, green onions, parsley and onion; stir.
Dressing:
In a shaker or a jar, combine olive oil, lemon juice, garlic, mint, salt and pepper; close; shake dressing until combined. Pour dressing over the salad and toss to combine. Taste and adjust mint, salt and pepper.
In the salad bowl, add the romaine lettuce, if using; toss to combine. Or, a bed of Romaine lettuce can be placed in a bowl with the Lebanese Salad added on top.
Refrigerate.
4-6 servings.
*If planning to have leftovers, don't pour all of the dressing on the salad. Only use the dressing on the part of the salad you plan on eating.
