Slow Cooker Chicken Noodle Soup

Description

Use your slow cooker to make a great, delicious, comforting and satisfying meal on a cold winter day.

Ingredients

  • 2 lb. boneless, skinless chicken breasts, trimmed
  • 1 onion, diced
  • 1 c. sliced carrots
  • 1 c. sliced celery
  • 1 T. freshly grated ginger
  • 1 T. minced garlic
  • 8 c. low-sodium chicken broth
  • 1 t. dried thyme
  • 1 t. dried oregano
  • 12 oz. egg noodles
  • salt and pepper, to taste
  • 3 T. freshly chopped parsley

Steps

  1. Place chicken in a 6-8 quart slow cooker. Add onion, carrots, celery, ginger and garlic; add chicken broth; stir in thyme and oregano.
  2. Cover; cook on Low for 6-8 hours, or on High for 3-4 hours.
  3. Transfer chicken to a cutting board; shred chicken with a fork; add chicken back into the slow cooker.
