Description
You won't miss the meat or the red sauce in this delicious pizza. It's full of fresh vegetables and makes a great, easy to prepare, meatless meal.
Ingredients
- 1 lb. store bought pizza dough, (or homemade)
- 2 1/2 T. extra virgin olive oil, divided
- 3 garlic cloves, minced
- 1/2 t. dried oregano
- 1/4 t. dried basil
- 1/8 t. dried thyme
- salt and freshly ground black pepper
- 6 oz. fresh mozzarella cheese, chopped into pieces (low moisture mozzarella would be fine)
- 4 oz. feta cheese, crumbled
- 1/2 c. chopped or sliced favorite bell pepper, optional
- 1 c. diced grape or cherry tomatoes, halved
- 1/3 c. chopped Kalamata olives
- 1/4 c. chopped red onion
- 1 T. chopped fresh parsley
Steps
- Preheat oven to 450 degrees. Place a pizza stone in the oven to heat for 30 minutes.
- Meanwhile, combine 1 1/2 T. olive oil and garlic in a small bowl.
- Spread and shape pizza crust into a 12 to 13 inch round over a sheet of lightly floured parchment paper. Create a rim along the edge of the dough. Brush pizza dough evenly with olive oil mixture.
