You don't need to live on the West Coast to enjoy this dish. It's made in a wonderful sauce made from ginger, orange juice and soy sauce. Serve it with rice or your favorite sides.
1 c. frozen orange juice concentrate, thawed
1/3 c. butter, melted
4 t. soy sauce
2 t. salt
2 t. ground ginger
1/4 t. pepper
5 lb. bone-in chicken thighs, skin removed
Sauce:
In a small bowl, combine the first six ingredients.
Place chicken thighs in a single layer in two greased 11x7-inch baking dishes; spoon sauce over the top. Cover; refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees.
Bake uncovered for 1 hour or until juices run clear, basting with sauce once during cooking.
