Description
This is a super easy, delicious and economical meal to serve to your family on those busy weeknights. It can be on the table in about 15 minutes. It could also be served a side dish.
Ingredients
- 12 oz. uncooked pasta (macaroni, shells, orecchiette pasta)
- 6 1/2 c. fresh broccoli florets, no stems
- 5 cloves garlic, minced
- 1/4 c. freshly grated Parmesan or Romano cheese (use a good quality cheese)
- 2 T. olive oil, divided
- kosher salt
- freshly ground black pepper
Steps
- Bring a large pot of well salted water to a boil; add pasta and broccoli together: cook al dente according to pasta directions.
- When pasta is almost done, reserve/set aside about 1 c. pasta water; drain; set broccoli and pasta aside.
- Return pot to the stovetop; set heat to high; add 1 T. olive oil; when hot, add garlic; cook until golden; reduce heat to low; add pasta back to the pot. Stir well; add remaining olive oil, cheese, salt and pepper; stir well. Add 1/2 c. reserved pasta water; stir, add more water if needed.
