If you have 30 minutes, you can prepare and serve this wonderful, delicious and easy to make side dish. It elevates simple rice to the next level.
3 c. vegetable stock (or chicken stock)
1 1/2 c. jasmine rice
1 T. low-sodium soy sauce
1 T. sesame oil
1/2 c. frozen peas
1/2 t. kosher salt, as needed
2 green onions, very thinly sliced
Combine rice and stock in a large saucepan, cover; bring to a boil; reduce heat to low; simmer for 18 minutes. Stir rice, checking for tenderness.
When the liquid has been absorbed, drizzle with the soy sauce and sesame oil; stir to coat. Add frozen peas; stir. The hot rice will cook the peas in just 1-2 minutes.
Add salt only as needed. Add green onions; stir; keep covered until ready to serve.
4-6 servings.
