Need a new dish for meatless Mondays? This one is super simple, quick and economical. It's delicious too and can be customized to your own tastes, adding your favorite veggies, if you would like.
1 lb. spaghetti or other favorite pasta
2 T. salt
1/4 c. plus 2 T. extra-virgin olive oil
8 garlic cloves, minced
1/2 t. red pepper flakes
2 t. freshly squeezed lemon juice
3 T. finely chopped fresh parsley
Bring a large pot of water to a boil; add the salt; add the pasta; cook according to package directions; drain.
While pasta is cooking, pour in 1/4 c. olive oil in a small saucepan; heat over low heat for 1 minute. Add in garlic and red pepper flakes; stir; cook 1 minute; remove from heat.
Pour olive oil mixture over drained pasta; add 2 T. olive oil; add lemon juice; mix well; add parsley; toss until pasta is coated.
