This crustless Italian spinach pie is quick and easy to make. But even better than that, it's satisfying, comforting, delicious and healthy. Enjoy it for breakfast, lunch or dinner.
16 oz. container low-fat cottage cheese
10 oz. pkg. frozen chopped spinach, thawed, very well drained
1 c. low-moisture part-skim Mozzarella cheese
4 eggs, beaten
3 oz. from a 7 oz. jar roasted red peppers, well drained, chopped (or 1/2 c. chopped red bell pepper)*
1/3 c. grated Parmesan cheese
1 t. dried oregano leaves
Preheat oven to 350 degrees. Spray a 9 inch pie plate with non-stick cooking spray.
In a bowl, mix all ingredients together until blended.
Pour into prepared pie plate.
Bake 40 minutes or until center is set.

*Substitute chopped onion, if preferred.
