Everyone loves pancakes, right? Using these muffin mixes, you can make many different flavors of pancakes in a snap. They are so easy to make and really delicious.
1 large egg
2/3 c. milk
1 T. vegetable oil
1 package Martha White® muffin mix, any flavor (cinnamon sugar, blueberry, chocolate chip, wild berry banana nut, banana chocolate chip, strawberry, blueberry cheesecake, chocolate chocolate chip, strawberry cheesecake, apple cinnamon, lemon poppy seed, cranberry orange, apple cider, honey bran, pumpkin spice)
Heat non-stick griddle or a large non-stick skillet to 325 degrees over medium-low heat.
Whisk the egg in a medium bowl; stir in muffin mix, milk and oil just until large lumps disappear.
Pour 1 T. of batter for each pancake onto hot griddle. Cook 30 - 60 seconds or until bubbles begin to break around edges and bottom is golden brown. Flip over; cook 30 to 60 seconds or until golden brown.
Makes 24 mini pancakes.
