Make this easy side dish in less than 30 minutes. It's prepared with a few simple ingredients and is just full of flavor.
2 T. butter
1/2 c. orzo pasta
1/2 c. diced onion
2 cloves garlic, minced
1/2 c. uncooked white rice
2 c. chicken broth/stock (or vegetable broth/stock)
Kosher salt (might not be needed this if using store-bought broth)
freshly chopped parsley, for serving
Melt butter in a small skillet over medium heat. Add orzo; cook, stirring until it turns a golden brown. Add onion; cook until onion is translucent. Add garlic; cook for about 1 minute.
Pour broth/stock and white rice into the skillet; stir; let it come to a boil; reduce heat to low, making sure it's still simmering; cover. Simmer until rice is tender and liquid is absorbed, 20-25 minutes.
Remove from heat; let stand several minutes. Fluff with fork. Serve with freshly chopped parsley.
