Lemon lovers, this one's for you. It's a little like a tiramisu mixed with a cheesecake.
8 oz. carton mascarpone cheese
8 oz. package cream cheese, softened
3.4 oz. package instant lemon pudding mix
1 c. 2% milk
1 t. lemon extract
2/3 c. lemon juice
3 T. sugar
24 crisp ladyfinger cookies
2 t. grated lemon zest
In a large bowl, beat mascarpone cheese, cream cheese, pudding mix, milk and lemon extract together on medium speed until blended, 2-3 minutes, being careful to not over-beat.
In a shallow bowl, whisk lemon juice and sugar until sugar is dissolved. Quickly dip 8 ladyfingers into lemon juice, allowing excess to drip off; place in a single layer in an 8 x 8 dish. Spread one third of the mascarpone mixture over the top. Repeat layers two more times. Sprinkle with lemon zest. Cover.
Refrigerate for at least 2 hours before serving.
