Are you still serving boring mashed potatoes? Stop! Take them up a notch and make them with a ranch dressing seasoning mix. You'll be glad that you did.
2 lb. russet potatoes, peeled and cut into 1 inch cubes
6-8 T. butter plus more, if desired
1/2 c. sour cream
1 oz. packet Hidden Valley Original Ranch Salad Dressing and Seasoning mix
splash of milk, if needed
salt and pepper
1 T. freshly chopped chives (or dill)
Place potatoes in a large pot; cover with cold water; add salt. Bring to a boil; lower heat to a simmer, uncovered for 10-12 minutes or until potatoes fall apart when pierced with fork.
Drain potatoes. Return potatoes to the pot. Add butter. Mash potatoes until smooth. Stir in Ranch seasoning a little at a time to taste; add sour cream. Stir in milk, if needed.
Serve immediately with more butter if desired and garnished with chopped chives or dill.
