Some people are chocolate lovers and some are lemon lovers. Lemon lovers, this one will make you very happy. It's delicious and very refreshing and makes a great dessert any time of the year.
½ c. (1 stick butter)
1 c. flour
1 ½ t. baking powder
¼ t. salt
1 c. sugar
1 c. buttermilk
1 t. vanilla extract
1 t. lemon extract
21 oz. can lemon pie filling
whipped cream, for serving
Preheat oven to 350 degrees.
Place butter in a 9 x 9 inch baking dish; place dish in the preheated oven to fully melt for 3-4 minutes; remove from oven; set aside.
In a medium mixing bowl, whisk together flour, baking powder and salt; add sugar; whisk to combine. Pour in buttermilk, vanilla and lemon extracts; whisk just until combined.
Pour batter evenly over melted butter in the baking dish - do not stir.
Spoon the lemon pie filling over the batter.
Bake for 45-55 minutes until the edges of the cobbler are golden brown.
Remove from oven. Cool slightly.
Serve topped with whipped cream.
