Description
This is the perfect side dish that will be a big hit for any gathering. It's loaded with crumbled bacon, Cheddar cheese and Ranch seasoning.
Ingredients
- 3 lb. potatoes, washed, halved or quartered
- 8 oz. sour cream
- 1/2 c. mayonnaise
- 1 oz. package Ranch seasoning mix
- 1 1/2 c. shredded Cheddar cheese
- 1 bunch green onions, sliced
- 6-8 slices bacon, cooked and crumbled
Steps
- Place potatoes in a large pot; cover with water; add salt. Bring to a boil; simmer for about 15 minutes, or until potatoes are fork tender. Drain; rinse in cold water; drain again; cool.
- In a large bowl, stir together sour cream, mayonnaise and Ranch seasoning mix. Add cooled potatoes, cheese and green onions and half of the bacon; stir well.
- Garnish with remaining bacon. Refrigerate about 2 hours or until well chilled.
