Refreshing Cucumber Lemonade

Description

Give your homemade lemonade a twist by adding some cucumber juice. That's right. It makes the beverage even more refreshing and tasty.

Ingredients

¾ c. sugar
2 c. water
2 c. cucumber juice from 4 regular or 2 English cucumbers
3/4 c. freshly squeezed lemon juice from 6 medium or 4.5 large lemons to get 3/4 c. of juice (6 oz.)

lemon and cucumber slices, for garnish
mint leaves, optional garnish

Simple Syrup:
Combine water and sugar in a saucepan; place over medium heat; cook until sugar has dissolved; let cool.

Cucumber Juice:
Peel 4 regular or 2 English cucumbers; cut into halves; scoop out/discard the seeds. Coarsely chop the cucumber; puree in a blender; strain through a fine mesh sieve. Keep juice refrigerated until ready to use.

Combine cooled simple syrup, cucumber juice and lemon juice. Refrigerate until cold.

Serve over ice, garnished with lemon and cucumber slices. Add mint, if desired.

4 servings.

Tips:
Place cucumber and lemon slices on the sides of glasses, add ice and then pour in lemonade.

Do not put hot simple syrup into a glass pitcher or it may break.

If the flavor is too strong, add more water, to taste.
