Do you need a fantastic dessert to feed a crowd? This one is easy and delicious and is perfect to serve at those summer get togethers.
Crust:
2 ¼ c. all-purpose flour
¼ c. sugar
¼ t. kosher salt
1 c. cold butter, cut into cubes
Pie Filling:
6 oz. strawberry jello, unprepared
1 ½ c. sugar
⅓ c. cornstarch
½ t. salt
20 oz. Sprite (2 1/2 c.)
32 oz. fresh strawberries, washed, tops discarded, sliced (not frozen)
whipped topping or whipped cream, for garnish
Crust:
Preheat oven to 325 degrees.
Mix flour, sugar, salt and butter together until crumbly. Press into an 18x12 inch sheet pan; prick all over with a fork. Bake 22-25 minutes or until light brown. Remove from oven; cool.
Pie Filling:
Add jello, sugar, cornstarch, salt and Sprite to a saucepan over medium heat; bring to a boil, whisking until thickened. Remove from heat; cool to room temperature.
Arrange strawberries over cooled crust. Pour filling over strawberries. Refrigerate for 2 hours or until set.
Serve, garnished with whipped topping or whipped cream.
