These homemade margaritas taste like a regular margarita with just a hint of cucumber. They are refreshing and cooling cocktails with 115 calories per serving and no sugar.
Ingredients
- Cucumber Juice:
- 2 regular cucumbers, peeled (makes about 1 1/2 c. juice)
- Cucumber Lime Margarita:
- 1 1/2 oz. Silver Tequila
- 1 1/2 oz. freshly squeeze lime juice (about 1/2 of a lime)
- 3 oz. fresh cucumber juice
- lime and cucumber wedges, for garnish
Steps
- Cucumber juice:
- Juice the peeled cucumbers in a juicer (like a NutriBullet) or a blender. If using a blender, add cucumbers; blend for about 30-45 seconds until it's thick juice. Strain the pulp from the juice by placing a fine mesh strainer over a bowl. Gently push on the pulp using a spoon or spatula.
