Description
These homemade margaritas taste like a regular margarita with just a hint of cucumber. They are refreshing and cooling cocktails with 115 calories per serving and no sugar.
Ingredients
Cucumber Juice:
2 regular cucumbers, peeled (makes about 1 1/2 c. juice)
Cucumber Lime Margarita:
1 1/2 oz. Silver Tequila
1 1/2 oz. freshly squeeze lime juice (about 1/2 of a lime)
3 oz. fresh cucumber juice
lime and cucumber wedges, for garnish

Cucumber juice:
Juice the peeled cucumbers in a juicer (like a NutriBullet) or a blender. If using a blender, add cucumbers; blend for about 30-45 seconds until it's thick juice. Strain the pulp from the juice by placing a fine mesh strainer over a bowl. Gently push on the pulp using a spoon or spatula.
Margarita:
In an 8 oz. glass filled with ice, add tequila, lime and cucumber juices; stir.
Serve, garnished with cucumber and lime wedges.
Makes 4 cocktails.
*Tip: For margaritas on the sweeter side, stir in 1 t. agave nectar.
