In just a few minutes, you can have this delicious pasta salad on your table. It could be a great side dish or even a main dish, if you wish.
1 T. kosher salt, for water
8 oz. small pasta like fusilli
1/4 c. red onion, sliced thinly
1/2 c. olive oil
1/4 c. red wine vinegar
2 T. freshly squeezed lemon juice
4 cloves garlic, minced
2 t. Za'atar seasoning mix (or thyme and oregano)
1 t. kosher salt, or to taste
1 t. freshly ground black pepper
10-12 oz. canned tuna, drained
6 oz. can whole black or Kalamata olives, drained and halved
16 oz. cherry or grape tomatoes, sliced in half, about 2 c.
1 English cucumber, chopped into 1/2 inch pieces, about 1 c.
1/4 c. fresh parsley, chopped small
1/2 c. feta cheese, optional
Bring a large pot of water with 1 T. kosher salt to boiling; cook according to package directions; drain, but don't rinse.
While pasta is cooking, combine onion, olive oil, vinegar, lemon juice, garlic, Za'atar seasoning, salt and pepper in a large bowl; stir. Let sit while assembling the salad.
In the same bowl, add the pasta, tuna, olives, tomatoes and cucumber together with the olive oil mixture; stir to coat; add parsley; stir.
Season to taste with more salt and pepper; add feta cheese.
Serve immediately or refrigerate until ready to serve.
