Description
You will think that you got this salad from the restaurant, it tastes so good. It's easy to do at home, so take advantage and enjoy all of its goodness.
Ingredients
- Dressing:
- 1/2 c. mayonnaise
- 1/3 c. red wine vinegar
- 1/3 c. freshly squeezed lemon juice from about 1 lemon
- 1 T. extra-virgin olive oil
- 1 t. dried parsley
- 1 t. dried basil
- 1/2 t. dried oregano
- 1/2 t. garlic powder
- 1/4 t. salt
- 2 T. grated Parmesan cheese or more to taste
- Salad:
- 4-6 c. chopped Romaine lettuce
- half of a small red onion sliced into rings
- 1 large tomato, sliced
- 8 whole Pepperoncini peppers, drained
- 1/3 c. pitted Kalamata olives
- 1/2 c. croutons
- freshly grated Parmesan cheese
- freshly ground black pepper
Steps
- Dressing:
- In a small bowl, whisk together mayonnaise, vinegar, lemon juice, olive oil, parsley, basil, oregano, garlic powder, salt and Parmesan cheese. Refrigerate in an airtight container for up to 4 weeks.
- In a large bowl, add lettuce, onion, tomato, peppers and olives; toss together. Add desired amount of dressing; toss. Top with croutons, Parmesan cheese and black pepper.
