Make your own homemade ice cream without churning or any kind of machine with just a freezer safe mason jar and 4 ingredients. Add flavor ingredients of choice if you wish and freeze for a few hours.
1 c. heavy whipping cream, cold
3 T. cane sugar, honey or maple syrup
1 t. vanilla extract
large pinch of salt
**optional ingredients for flavor choices plus matching food coloring to enhance color, if desired
In a freezer-safe*, wide mouth Mason pint jar, combine heavy cream, sweetener of choice, vanilla extract and salt.
Screw on the lid, close tightly and shake until the mixture is almost doubled in size and about the consistency of brownie batter, about 5 minutes.
Place the jar in the freezer for about 2-3 hours. Shake every 20-30 minutes to incorporate any mix-ins and prevent iciness.
*Straight sided jars are safe to use in the freezer.
**Flavor Choices:
Chocolate Ice Cream: Add in 1-2 T. unsweetened cocoa powder before shaking.
Strawberry Ice Cream: Blend 1/2 c. fresh or frozen strawberries into a puree and mix in before shaking, or 1-2 T. strawberry jam.
Cookies and Cream Ice Cream: Mash up 2-3 chocolate sandwich cookies; add the pieces in the ice cream mixture before freezing.
Mint Chocolate Chip Ice Cream: Add a few drops of mint extract and a handful of mini chocolate chips to the ice cream before shaking.
Peanut Butter Ice Cream: Add in 1 t. peanut butter to the mixture before shaking.
Lemon Ice Cream: Add in 1 t. lemon juice and 1/2 t. lemon zest to the mixture before shaking.
