No-Bake Peanut Butter Pie Bars

Description

These luscious bars won't last long in your house because they are made with the dream team of peanut butter and chocolate.

Ingredients

Crust:
1 1/2 c. chocolate cookie crumbs, like Nabisco Famous Wafers*
3/4 stick unsalted butter, melted

Topping:
1/2 c. peanut butter
1/2 c. sweetened condensed milk
1 1/4 c. heavy cream
1/3 c. mini-chocolate chips

Chocolate Sauce:
1 c. water
1/2 c. sugar
2/3 c. unsweetened cocoa powder
1 t. vanilla extract

Lightly spray a 9 x 9 inch baking dish; line with parchment paper, leaving ends hanging off the edges allowing it to be easily lifted out after chilling for easier cutting.

Toss crumbs with melted butter until all crumbs are completely and evenly saturated; press evenly into the bottom of the prepared pan.

Combine peanut butter and sweetened condensed milk in a bowl; microwave for about 30 seconds to soften the peanut butter. Blend the two together until smooth.

Whip cream until stiff peaks form; gently blend in the peanut butter mixture, folding until no streaks are left.

Spread mixture onto the crust; scatter mini chips over the top. Refrigerate for at least 2 hours.

Chocolate Sauce:
Put water, sugar and cocoa powder in a sauce pan; gradually bring to a boil, stirring to dissolve everything. Let sauce boil gently for several minutes until just starting to thicken. Remove from heat; stir in vanilla. The sauce will thicken as it cools. It will keep in the refrigerator for a month.

Serve, drizzled with chocolate sauce.

Store bars in a covered container in the refrigerator. The bars are also good frozen.

Tips:
*Nabisco Famous Wafers provide the best flavor in the crust, but can be pricey. You could substitute other chocolate cookie like Oreos or chocolate graham crackers.

If the peanut butter and condensed milk mixture is too stiff, add a little more milk to smooth it out.

If you have trouble blending the peanut butter mixture into the whipped cream, you don’t have to fold, you can beat it together. Just don’t beat too long or too hard or your cream will turn into butter.
