No-Bake Berry Icebox Cake

Description

This delicious, simple to prepare summer treat doesn't require heating up the kitchen but lets the refrigerator do the work. Scatter the berries around or place them in a flag design, if desired.

Ingredients

19 oz. graham crackers
8 oz. cream cheese, softened
2 (3.4 oz.) boxes vanilla instant pudding, dry
2 1/2 c. cold milk
12 oz. Cool Whip, divided
3 c. fresh strawberries, sliced
1 1/2 c. fresh blueberries
2 oz. white chocolate chips

Use a mixer to beat together cream cheese and dry pudding mixes in large bowl until well blended; gradually beat in milk; stir in Cool Whip, reserving 1/2 c. of the Cool Whip.

Use the reserved Cool Whip to spread a thin layer on the bottom of a 9x13 pan, just coating the bottom of the pan.

Layer 5 graham crackers across the center of the pan, then 2 more, breaking crackers as needed to fit around the edges.

Spread a layer of pudding mixture over graham crackers; top with a layer of blueberries and sliced strawberries. Place graham crackers on top of berries, then pudding mixture, then another layer of berries.

Repeat the graham cracker, pudding and berry layers one more time for a total of 3 times.

Refrigerate for at least 4 hours or overnight until the graham crackers have completely softened.

When ready to serve, melt the white chocolate chips in a bowl as directed on the package; drizzle over the dessert with a spoon on top of the berries.

12-16 servings.

Refrigerate any leftovers.
