Red, White and Blue Patriotic Poke Cake

Description

Celebrate July 4th or Memorial Day with a beautiful poke cake. Start with a white box cake or even a store bought cake, then decorate it in red and blue Jello with red, white and blue sprinkles.

Ingredients

1 white cake mix and ingredients listed on the box
3 oz. package red Jello
3 oz. package blue Jello
2 c. boiling water, divided
1 c. cold water, divided
8 oz. Cool Whip, thawed
¼ c. powdered sugar
red, white and blue sprinkles

Make cake following the package directions; let cool for at least 30 minutes.

Use the end of a wooden spoon to poke holes over the entire cooled cake, about ½ – ¾ the depth of the cake, but not poked all the way through or the colors will leak through the bottom of the cake and turn purple.

In a small bowl, dissolve red Jello in 1 c. boiling water; when Jello powder has dissolved, stir in ½ c. cold water.

In another small bowl, dissolve blue Jello in 1 c. boiling water; when it is dissolved, stir in ½ c. cold water. If using the same bowl as the red Jello, be sure to wash the bowl first for a more vibrant blue and not purple.

Use something with a spout, a syringe or a condiment bottle to very carefully pour the red and blue jello into alternating holes in the cake, being careful not to mix them or the cake will turn out purple.

Cover; refrigerate for at least 2 hours.

In a medium bowl, whisk Cool Whip and powdered sugar together; spread over the cake; garnish with sprinkles.

16 servings.

Refrigerate leftovers.
