Description
This is a healthy, quick and easy to make salad that you'll add to your rotation. Best of all, it's delicious.
Ingredients
- 1 3/4 lb. ripe heirloom tomatoes, cut into chunks
- 8 oz. cherry and teardrop-shaped tomatoes, halved
- 3/4 English cucumber, peeled in alternating strips, cut into chunks
- 10 large basil leaves, torn into pieces
- 2 T. red wine vinegar
- 1/4 c. extra-virgin olive oil
- 1 t. sea salt
- 1/4 t. black pepper
Steps
- In a small bowl or mug, add olive oil, vinegar, salt and pepper; stir.
- Add tomatoes, cucumber and basil leaves to another bowl.
- When ready to serve, pour olive oil mixture over the tomato mixture; let sit a few minutes; toss.
