Apple Bourbon Caramel:
Melt butter in a large saucepan over medium heat; pour in sweetened condensed milk and corn syrup; add in brown sugar. Whisk or stir until it starts to simmer, regularly scraping the sides and bottom.
Let sauce simmer until the temperature reaches 200-205 degrees, just needing to simmer long enough to get the granulation out, but not take it to soft ball stage.
When it has reached the temperature, remove from heat; carefully stir in vanilla, apple bourbon and salt, stirring until well combined. Let cool.
At this point it can be poured into jars for storage and is shelf stable for up to 1 month.
Apple Nachos:
Slice apples from the exterior to the interior, cutting thin cross sections of the apples until getting to the core. Change directions and cut all the way around the apple to make the apple chips.
Spread slices on a platter; drizzle on the caramel bourbon sauce and desired toppings.
8 servings.
*Bourbon can be omitted if desired.
