Use a store bought brownie mix to make a yummy dessert reminiscent of the well known campfire treat. It's great to take to potlucks or serve at home for special days.
non-stick cooking spray
9 whole graham crackers, broken into halves, (18 pieces total) divided
18.3 oz. package chewy fudge brownie mix
1/4 c. water
2/3 c. vegetable oil
2 large eggs
2 c. (12 oz. package) semi-sweet chocolate morsels, divided
2 c. mini-marshmallows
Preheat oven to 350 degrees.
Line 13 x 9" metal baking pan with aluminum foil, leaving an overhang on 2 sides; spray foil with cooking spray.
Place 15 graham cracker halves in the bottom of pan, overlapping slightly. Break remaining 3 graham cracker halves into 1/2 pieces; set aside.
Combine brownie mix, water, oil and eggs in medium bowl until blended; stir in 1 c. morsels. Spread over graham crackers in baking pan.
Bake 25 - 30 minutes or until wooden toothpick inserted into center comes out still slightly sticky; remove from oven.
Preheat broiler.
Sprinkle remaining graham cracker pieces and marshmallows over the warm brownies.
Broil for 30 - 45 seconds or until marshmallows are a light brown, watching carefully as browning happens very fast. (A handheld kitchen butane torch could be used instead.) Remove from oven to wire rack.
Sprinkle immediately with remaining 1 c. chocolate morsels. Cool for at least 1 hour at room temperature.
Lift out by aluminum foil and transfer to a cutting board. Carefully remove foil.
Use a wet knife to cut into bars. Store in tightly covered container.
