Enjoy a dessert that is good and not overly sweet. Substitute your favorite fruit filling, if desired.
1/2 c. butter, melted and cooled to room temperature
1/2 c. light brown sugar
1 1/2 c. all-purpose flour
1/2 t. baking soda
1/2 t. baking powder
1/4 t. salt
1/4 c. pecans
Sour Cream Filling:
1 can cherry fruit filling or topping
1/2 c. sour cream
1/4 c. granulated sugar
1 T. all-purpose flour
1 egg
1/2 t. vanilla extract
Preheat oven to 375 degrees. Line an 8 X 8 baking pan with with parchment paper; spray with cooking spray.
Add pecans to a food processor; pulse until they become coarse crumbs.
Crust:
In a medium bowl, whisk together flour, brown sugar, pecan crumbs, baking soda, baking powder and salt; add cooled, melted butter, making sure that the butter is incorporated. The dough will be crumbly.
Set aside 3/4 c. of the crust; press remaining crust into the bottom of prepared baking pan.
Sour Cream Filling:
In a large bowl, mix together sour cream, sugar, flour, egg and vanilla. Pour over the crust in the pan.
Spoon fruit filling over the sour cream; gently swirl into sour cream filling.
Sprinkle reserved crust over the top. Bake 25-28 minutes or until golden brown.
Cool completely. Cut into bars.
Serve.
8 servings.
Store covered in refrigerator up to 3 days.
