You can make Chipotle's delicious rice at home easily with this recipe. Serve it with your favorite main dishes.
1 c. basmati extra long grain rice
2 T. butter, divided
1 bay leaf
2 c. water
1 t. salt
2 T. freshly chopped cilantro
1 1/2 T. freshly squeezed lime juice from half a large lime
1 T. freshly squeezed lemon juice
In a medium-heavy pot over medium heat, add 1 T. butter, bay leaf and rice; saute for about 2 minutes, stirring constantly. Pour in water and salt; bring to a boil. Once boiling, cover; reduce heat to a simmer. Simmer for 15-17 minutes, until water is absorbed and rice is fluffy. Remove from heat.
Stir in remaining butter, cilantro, lime and lemon juices. Stir until well combined. Remove the bay leaf.
Serve.
