You won't be able to resist this soft, buttery cake with a cinnamon, crunchy topping. It's so easy to make, you'll make it often.
Cake:
2 c. all-purpose flour
1 c. sugar
2 t. baking powder
1 t. kosher salt
1 c. milk
1 t. vanilla extract
2 T. unsalted butter, melted and semi-cooled
Topping:
1/2 c. unsalted butter, melted
1/2 c. sugar
1 T. ground cinnamon
Cake:
Preheat oven to 350 degrees. Grease a 10x10 inch baking pan.
Whisk together the flour, sugar, baking powder and salt in a large bowl. Stir in milk, vanilla and butter. Pour batter into prepared pan. Bake 25 minutes.
Topping:
While cake is baking, combine melted butter, sugar and cinnamon in a bowl: whisk together.
Remove cake from oven after 25 minutes. Pour topping across the cake, beginning around the edges.*
Bake for another 10 minutes, until cinnamon layer is bubbling.
Cool before serving.
9 servings.
*When pouring on the topping, first pour the topping mostly around the sides and then lightly across the top. Pouring it all on the center of the cake immediately will cause the cake to fall slightly. While it is still delicious, it will not be as pretty.
