This salad is bright, beautiful, flavorful and delicious. It will be be a family favorite for years to come.
Salad:
6 c. mixed spring greens
1 lb. firm but ripe pears, thinly sliced
1/2 c. pomegranate seeds, dried cranberries or dried cherries
1/2 c. blue cheese, crumbled
1/2 c. candied pecans or walnuts, chopped
Dressing:
1/2 c. olive oil
3 T. balsamic vinegar
1 T. honey
1 1/2 t. Dijon mustard
salt and pepper, to taste
Place mixed greens, pear slices, pomegranate seeds, blue cheese and pecans in a large bowl.
In a small bowl or jar, whisk/shake together dressing ingredients until smooth.
Drizzle dressing over the salad, gently tossing to coat.
Serve immediately.
