This is a great meal to serve family or guests for breakfast, brunch or maybe even dinner. It's so easy, you will make it often.
2 - 9 oz. packages breakfast sausage links or ground sausage
1 lb. bacon
32 oz. package tater tots
12 large eggs
1/2 c. milk
1/4 c. green onions, thinly sliced
1/2 t. salt
1/4 t. black pepper
1 c. Monterey Jack cheese, shredded or preferred cheese
2 c. shredded Cheddar cheese, divided
2 T. green onions, thinly sliced
Preheat oven to 350 degrees. Spray a 9 X 13 inch baking dish with cooking spray.
Cook sausage in a skillet according to package directions until completely cooked. Transfer to a paper towel lined platter. Slice sausage into 1/2 inch pieces. Remove and discard all fat from skillet.
Cook bacon in the same clean skillet until brown and crispy. Drain on a paper towel lined platter; crumble.
Arrange tater tots in a single layer in the prepared baking dish.
In a bowl, whisk together eggs, milk, 1/4 c. green onions, salt and pepper; stir in sausage and half of the bacon. Fold in Monterey Jack cheese and 1 c. Cheddar cheese into the egg mixture; pour egg mixture over tater tots.
Bake until egg mixture is set, about 40-45 minutes.
Sprinkle top evenly with remaining 1 c. Cheddar cheese; bake about 5-7 minutes until cheese has melted.
Let stand 10 minutes before cutting. Sprinkle on remaining crumbled bacon and 2 T. green onions.
Serve.
