Love oatmeal cookies? Make these cookie bars easily without any fuss. They are great alone but are taken to the next level with the browned butter frosting.
2 1/2 c. old fashioned oats
2 c. flour
1 1/2 c. brown sugar
1 t. baking soda
1 t. salt
1 T. vanilla
2 eggs
1 1/4 c. butter, melted
2 c. milk chocolate chips
1/2 c. semi-sweet chocolate chips
Browned Butter Frosting:
1/4 c. butter
2 1/2 c. powdered sugar
1 tsp. vanilla
pinch of salt
5–6 T. Half-n-Half*
Preheat oven to 350 degrees. Spray a 9×13 baking dish with cooking spray.
In the bowl of a stand mixer, add oatmeal, flour, brown sugar, baking soda, salt, vanilla, eggs and melted butter; mix until just combined. Stir in chocolate chips.
Spread batter in prepared baking dish. Bake 20-25 minutes. Bars should be slightly underdone. Remove from oven.
Cool before frosting.
Browned Butter Frosting:
In a small saucepan, brown the butter over medium heat until golden brown and golden brown flecks appear. Butter will become a little foamy. Stir occasionally so that butter cooks evenly.
Remove from heat; cool slightly. Add powdered sugar, vanilla, salt and Half-n-Half; stir until a smooth. Spread onto cooled bars.
*Start with about 4T. Half-n-Half, adding more as needed.
