If you love key lime pie, then these bars are for you. They are a no-bake dessert with a chocolate graham cracker crust and a tangy key lime filling.

Ingredients

Crust:
18 whole chocolate graham crackers
1 stick salted butter, melted
cooking spray

Filling:
3 - 8 oz. packages cream cheese, at room temperature
1 1/2 c. granulated sugar
1/2 c. bottled Key lime juice
1 1/2 t. vanilla extract
4 large eggs
1/2 c. sour cream
powdered sugar, for topping

Preheat oven to 350 degrees. Place a 9x13 inch baking pan of hot water on the bottom oven rack.

Crust:
Line another 9x13 inch baking pan with aluminum foil; coat with cooking spray.

Pulse graham crackers in a food processor until fine crumbs form. Add butter; pulse until crumbs are well coated and stick together when pinched. Press evenly into bottom of prepared pan.

Filling:
In a large bowl, beat cream cheese, granulated sugar, lime juice and vanilla with a mixer on medium speed until smooth and light, 2 - 3 minutes. Add eggs, one at a time, beating well after each addition. Add sour cream; beat until just incorporated, 1 minute. Pour filling over crust; smooth the surface.

Bake until center is just set but still slightly jiggly, about 45 minutes. Turn oven off, leaving bars in the oven with the door closed for 10 minutes. Open door halfway, leaving the bars in the oven until firmly set around the edges and barely jiggly in the center, about 10 more minutes.

Remove from oven; let cool to room temperature, about 30 minutes; refrigerate until cold, at least 1 hour and up to 24 hours.

Remove bars from the pan and peel off the foil. Generously dust with powdered sugar.

Cut and serve.
