Celebrate fall with this healthy salad that can take you right through the holidays. Make it with your favorite seasonal apples, cashews, dried cranberries, spring mix greens and a wonderful vinaigrette dressing.
Salad:
2 - 5 oz. packages spring mix salad greens
2 large apples, thinly sliced (1 red like Fuji and 1 green)
9 1/4 oz. can lightly salted cashews
5 oz. package dried cranberries
1/2 c. shredded Parmesan cheese or crumbled Feta cheese
Vinaigrette Dressing:
2/3 c. sugar
1/2 c. canola oil
1/3 c. cider vinegar
1 t. ground mustard
1 t. poppy seeds
1 t. salt
In a large bowl, combine the salad ingredients.
In a small bowl, whisk vinaigrette ingredients together until blended; pour over salad; toss to coat.
Serve immediately.
