French toast roll-ups are great for an easy but delicious breakfast. They're filled with combinations of fruit, cream cheese or Nutella. They also make a great snack for anytime of the day.
8 slices white sandwich bread
softened cream cheese with diced strawberries, or Nutella with diced strawberries for the filling
2 eggs
3 T. milk
1/3 c. granulated sugar
1 heaping t. ground cinnamon
butter, for greasing the skillet
Cut crusts from bread slices; flatten bread out with a rolling pin.
Place about 1-2 t. chosen filling about 1 inch from one end of the bread in a strip. Roll bread up tightly. Repeat with the remaining bread.
In a shallow bowl, whisk eggs and milk until well combined.
In another shallow bowl, mix sugar with cinnamon.
Heat a skillet over medium heat; melt 1 T. butter.
Dip each bread roll, in the egg mixture, coating well; place in the skillet seam-side down. Cook in batches until golden brown, turning to cook and brown on all sides, about 2 minutes per side. Add more butter as needed.
Place cooked rolls immediately in the cinnamon sugar, rolling around until completely covered in sugar.
Serve as is immediately or with syrup for dipping, if desired.
