These lemon brownies will be a hit every time that you make them. They're super moist, soft and are topped with a delicious glaze.
Brownies:
1/2 c. salted butter, softened*
3/4 c. granulated sugar
zest from 1/2 lemon
2 large eggs
1 T. freshly squeezed lemon juice
3/4 c. all-purpose flour
1/2 t. baking powder
Glaze:
3/4 c. powdered sugar
1 1/2 T. freshly squeezed lemon juice
zest from 1/2 lemon
Preheat oven to 350 degrees. Spray an 8 × 8" baking pan with cooking spray or line it with parchment paper; set aside.
Brownies:
In a large bowl or the bowl of a stand mixer, beat together butter, sugar and lemon zest until light and fluffy. Add eggs one at a time, mixing well after each addition; add lemon juice. Add flour and baking powder; mix until just combined.
Pour batter into the prepared pan; smooth into an even layer.
Bake 20-25 minutes, or until a wooden toothpick inserted into the center comes out clean. Let cool for 10-15 minutes.
Lemon Glaze:
Whisk powdered sugar, lemon juice and zest together; pour over the brownies, spreading evenly to coat.
Let cool completely before slicing.

*If using unsalted butter, add a pinch of salt to the batter.
