Fried potatoes are a great side dish that go with just about any main meat dish. They are easy to make with just a few ingredients and a little bit of time.
4 large Yukon Gold potatoes, sliced (about 2 lb.)
1 large yellow or Vidalia onion
3 T. butter
1/4 c. olive oil
½ t. garlic powder, optional
salt and pepper, to taste
Scrub potatoes. Potatoes can be left with the peeling on or removed, if desired.
Slice potatoes into thin rings. Cut onion into slices.
In a large skillet and over medium heat, melt butter; add olive oil.
Place the potatoes evenly in the skillet. Cook undisturbed for about 5 minutes. Stir potatoes; add onions to the skillet. Cook for a few minutes; stir. Stir occasionally until potatoes are well browned on both sides and onions are soft and translucent, about 10-15 minutes.
4 servings.
*Bacon grease can be substituted for olive oil.
**Cooked potatoes can be used, lessening the total cooking time.
