Christmas cookies are always great but it can be a pain making them. These have the same yummy taste but are easier and quicker to make. These bars are a great way to serve at a party.
1 c. unsalted butter, at room temperature
1 c. light brown sugar, packed
1/2 c. granulated sugar
2 large eggs, at room temperature
2 t. vanilla extract
3 c. flour
1 t. baking soda
1 t. salt
1 c. Christmas colored M&M’s
1 c. semi-sweet chocolate chips
1/3 c. Christmas colored sprinkles
Preheat oven to 350 degrees. Line a 9 x 13 inch baking dish with parchment paper.
Using a stand mixer or hand mixer with a large bowl, beat butter, brown sugar and granulated sugar; mix in eggs and vanilla until combined.
In a medium bowl, whisk to combine flour, baking soda and salt; gradually mix dry ingredients into the wet ingredients until just combined.
Fold in about three fourths of the M&Ms, chocolate chips and sprinkles.
Add and press dough into prepared baking dish. Top with remaining M&M’s, chocolate chips and sprinkles, pressing them down slightly into the top of the dough.
Bake 20-25 minutes or until edges are light brown. They are done when a toothpick stuck in the center comes out free of cookie batter and the edges pull away a bit from the sides of the pan.
Let cool completely before cutting into 24 bars.
