Even if you think that you don't like sweet potatoes, you will like this casserole. It's sweet and delicious and perfect to enjoy on winter holidays.
3 whole sweet potatoes, about 2 c., cooked
2 t. vanilla
3/4 c. sugar
1/2 t. salt
1 stick butter
1 t. flour
3 eggs, beaten
Topping:
1 c. chopped pecans
1/3 c. soft butter
1/3 c. flour
1 c. brown sugar
Heat salted water to boiling; add sweet potatoes.* Cover; heat back to boiling, cook 30-35 minutes or until fork tender. Drain. Remove/discard skins.
In a large bowl, mash potatoes; add butter, sugar and salt.
Preheat oven to 350 degrees.
Beat eggs, vanilla and flour in a separate bowl. Mix together with potato mixture. Put in a 9x12 inch baking dish.
Mix together all topping ingredients; spread over potato mixture. Bake 30-35 minutes.
Serve.
*Add 1/2 t. salt for each 1 c. water.
