Bring in the New Year with the perfect, classic cocktail, It was created during WW I in Paris. It has a citrus tartness from the lemon juice, a sweetness from the simple syrup, and bubbles from the sparkling wine.
3 oz. gin
2 oz. freshly squeezed lemon juice
1 oz. simple syrup
ice, for shaking
sparkling wine (champagne, prosecco or cava)
lemon twists, for garnish
rosemary sprigs, for garnish
In a cocktail shaker, combine gin, lemon juice and simple syrup. Add a few ice cubes; cover; shake 10-20 seconds until chilled.
Strain mixture. Pour into 2 champagne flutes. Top with chilled champagne, prosecco or cava.
Serve immediately without ice, each garnished with a lemon twist and a rosemary sprig, if desired.
