If you love hummus and artichokes, this recipe is for you. It's made with chickpeas, marinated artichokes, tahini and garlic cloves. Serve with your favorite dippers.
15 oz. canned chickpeas, drained and rinsed
2 1/2 – 3 oz. extra virgin olive oil
3 T. tahini
1 large clove garlic, minced
2 – 3 canned marinated artichoke halves
1/4 t. freshly ground black peppercorns
1/2 t. sea salt
freshly squeezed juice from 1 lemon
freshly chopped parsley, green onion or thyme, for garnish
dippers of choice
Add chickpeas, olive oil, tahini, garlic, artichokes, lemon juice, freshly ground black peppercorns, sea salt, lemon juice into a food processor; pulse until smooth. Season to taste, if needed.
Transfer to a serving bowl. Drizzle with extra virgin olive oil; top with freshly chopped parsley, green onion, or thyme.
Serve with choice of dippers like sliced veggies, pita chips or toast wedges.
