Bacon, Lettuce, Tomato And Avocado Salad

Description

You can still enjoy a BLT without the bread with this healthy salad. It's easy to make and yummy too.

Ingredients

Salad:
8 strips bacon
1 head romaine lettuce, chopped
2 handfuls cherry or grape tomatoes, halved
1/2 cucumber, sliced
2 avocados, chopped

Dressing:
4 T. olive oil
2 T. balsamic vinegar
1 t. mustard
1 t. salt
1 lemon, juiced

Fry bacon until crispy; drain on a paper towel lined plate; set aside.

Place lettuce, tomatoes, cucumber, avocados and bacon in a large bowl.

In a small bowl or jar, stir together olive oil, vinegar, mustard, salt and lemon juice to prepare the dressing.

Toss the salad with the dressing.
