Description
This easy comforting soup is ready in less than 30 minutes. Just dump a combination of canned beans, tomatoes, corn and chili together for a delicious meal.
Ingredients
- 15 oz. can no beans chili, meat only
- 15 oz. can kidney beans with juices
- 15 oz. can pinto beans with juices
- 15 oz. can black beans with juices
- 15 oz. can diced tomatoes with juices
- 15 oz. can corn with juices (Fiesta corn or Mexicorn)
- 10 oz. can Ro-Tel Diced Tomatoes and Green Chilies with its juices
- salt and pepper, to taste
- onion and garlic powders, to taste if desired
- 8 oz. cubed Velveeta or favorite shredded cheese
- soup crackers, Fritos or tortilla chips, for serving
Steps
- Add the chili, 3 cans of beans, tomatoes, corn, and Ro-tel tomatoes into a large pot over high heat. Bring to a boil; reduce heat; simmer for 10 - 15 minutes. Season with salt and pepper, if needed.
- Stir cheese into the soup until melted.
- Serve immediately.
