This easy comforting soup is ready in less than 30 minutes. Just dump a combination of canned beans, tomatoes, corn and chili together for a delicious meal.
15 oz. can no beans chili, meat only
15 oz. can kidney beans with juices
15 oz. can pinto beans with juices
15 oz. can black beans with juices
15 oz. can diced tomatoes with juices
15 oz. can corn with juices (Fiesta corn or Mexicorn)
10 oz. can Ro-Tel Diced Tomatoes and Green Chilies with its juices
salt and pepper, to taste
onion and garlic powders, to taste if desired
8 oz. cubed Velveeta or favorite shredded cheese
soup crackers, Fritos or tortilla chips, for serving
Add the chili, 3 cans of beans, tomatoes, corn, and Ro-tel tomatoes into a large pot over high heat. Bring to a boil; reduce heat; simmer for 10 - 15 minutes. Season with salt and pepper, if needed.
Stir cheese into the soup until melted.
Serve immediately.
